• The Italian Culinary Experience combines 10 weeks in NY at The FCI with 18 unforgettable weeks in Parma, Italy learning the language and culture, including 9 weeks apprenticing in one of many restaurants in Italy.
   
• Essentials of Italian Cooking (8 sessions) – an easy way to fit a comprehensive Italian cooking class into a busy schedule.
   
• Pasta, Pizza, Polenta, and More (7 sessions) – Learn to create classic Italian favorites such as pasta, pizza, polenta, soups and sauces.
   
• Italian Cheese, Wine & Vegetables (7 sessions) – Learn to prepare a variety of vegetable antipasti, salads and sides—and become a wine and cheese aficionado.
   
• Italian Meat & Poultry (7 sessions) – Learn to create an array of antipasti and entrees from all over Italy with meat, poultry, and wild game.
   
• Italian Fish & Shellfish (7 sessions) – Turn almost anything that swims or lives in the sea into sensational Italian fare.
